green chile chicken bake

I created this out of a craving for chicken green chiles and cheese...
line a casserole with some refried beans and cover with a small can of diced green chiles and some shredded cheese

top with cooked shredded chicken, taco seasoning, diced green chiles, sliced jalapenos more cheese and a layer of corn- at this point I later realized that some black olives and a few dollops of Mexican cream or cream cheese would go great in there.


For the topping-cornmeal, 1 egg, more diced green chiles, salt, pepper and milk




spread over chicken mixture and add more cheese and jalapenos.



bake until it looks like this- 20 min or so at 350






mmmm....





top with taco sauce and a splash of ranch
green chile chicken bake
3 sm cans diced green chiles
1 can refried beans
2 cooked shredded chicken breasts
1/2 c cornmeal
1 egg
1/4 c milk
salt,pepper
1 pkt taco seasoning
pickled jalapenos, olives, cream cheese, corn (canned or frozen) and whatever else that ya think might go good...maybe diced tomatoes?
assemble ingredients as directed above. Bake and enjoy!

Oh how I wish corn didnt' affect me poorly as this looks wonderful! Way to go with all the chile/cheesy goodness. I like the idea of a refried bean base. I bet a black bean base would be really good too!

You could leave the corn out. It looks great! Easy & quick also! I love spicy food so this goes right up my alley. Also you could adjust the heat very easily. Thanks for sharing, I enjoy your blog.

This sounds really tasty. Normally I see casseroles like this made with ground meat, but I love that you used chicken! The cornmeal was a yummy addition too :).
