good morning!

a BIG note from me...

It's ready! Well, there are a few things to finish, such as transferring the domain name from here to there- but all and all I am ready to put my daily food and life onto the new site for y'all! So .....without much adieu go on and check out now, I don't intend on keeping that name, and you will see the site is set up as the domestic mama. Eventually, will also point there! But you guys can go ahead and enjoy! And there will be lots more to come!


See...we still have some fall colors in just have to look in other places than trees!

October 1st!

Wow... I have to fix the typos spellcheck missed! This little guy is from the 50s. He hung around my childhood every October, and now he hangs around with my kids. My mom gave him to me after my sister and I moved out. (She got one, too) I thought you'd like to see his bright little face wishing y'all a happy October 1st.
As a side note, all giveaway items are going out tomorrow and there will be a new "fall" giveaway coming next week. (Along with the new site, I hope....!) Please be sure and check thedomesticmama.blogspot if the .com site is not found. (Don't want my friends getting lost, ya know!) Today's post is not very fall-like. It's still about 85here. But I have my pumpkin guy out, at least!

When I turned 22, I was lucky enough to celebrate my birthday in Mexico. I went with the palm tree farmer that I lived with for 7 years, (that's a whole new story for the new site!) In Mexico, I saw Chitzen-Itza and was able to climb the pyramyd as it was before the authoeities closed it off for climbing. I really need to post a pic for ya'll. Maybe later today. check back. Anyway, one of the dishes I had was checiche- a marinated fish "salad" It's great.... This is a fillet of fresh mahi-mahi the hubby and I caught. (to be technical, I reeled this one in!)

chop up some scallions, cilantro and parsley....

now the fish...

dice it up like this.... what's that maybe 1/2'" chunks?

put everything in a nice little plastic container. With the juice of 3-4 limes. (the acid in the lime juice actually "cooks" the fish!

sprinkle a bit of fresh pepper and salt and give it a shake....

make sure everything is coated well, and put it in the fridge for 6-12 hrs. The fish will turn white and change from a raw consistency to "cooked". Serve over a bed of lettuce. Enjoy-MK
